Looking for something to cook while stuck inside because of the coronavirus pandemic? Try this recipe we found for low-carb creamy southwest chicken. It’s easy to create, isn’t packed with too many calories (191 calories per serving; 4 servings), and it’s said to be so good that it’s also enjoyed by those who are not on low-carb diets! If you’re not a total noob in the kitchen, it takes about 25 minutes to create (5 minutes of prep time; 20 minutes cook time).
Ingredients
- 1 tablespoon olive oil
- 2 medium chicken breasts
- 1/4 cup minced onion
- 2 cloves minced garlic
- 5 ounces canned green chiles (chopped)
- 1/4 cup heavy cream
- 1/4 cup cheddar cheese (shredded)
Preparation
- Heat large skillet with oil over medium heat.
- Cut chicken into bite-sized pieces and season with salt and pepper. Sauté until brown on both sides, adding onions about halfway through.
- Add garlic and cook for another minute.
- If needed, deglaze the pan with a little water.
- Add green chiles and cream, and simmer until chicken is done on both sides and the sauce is thickened.
- Top with shredded cheddar or jack cheese and serve when cheese melts.
Optional additions
- Cilantro and avocado slices are good optional garnishes
- Can add veggies such as chopped broccoli or cauliflower to boost fiber
- Can also be cooked in a slow cooker
